Wine making A wine obtained by “bleeding off” after a short period of cold maceration. Sedimentation and fermentation are done at a low temperature (18°C). The wine is then racked-off, before being fined and stabilized. It is then refrigerated and bottled to preserve freshness and aroma.
Taste A salmon-pink wine, with a flinty undertone, a nose of red berry fruits, peonys and jasmine. Fresh and light, it is vivid, elegant and harmonious.
Ageing Best drunk one year after harvest. Two years max.
Serving Pairs well with salads, white meat or fish, including sushi. Serve chilled at 8-10°C.
